What I'm more surprised about is the fact that Elsa is shocked by Garth calling out her affection. It seems like something that she'd gladly admit to rather than be surprised.

Yvonne is in denial and since people like her are horribly dense, well.... there's a reason readers gave her the superhero name Neutron Star Girl.

I'd say she about 80% knows. Given that in the previous chapter her response to Elsa listing out the kind of person she likes was to still assume Elsa was talking about guys rather than just describing her makes me think that Evie still hasn't consciously recognized that Elsa loves her romantically. Whether it's denial or density, the thinking part of her brain still doesn't have that information.

I'd like to know why is Elsa so sad and unresponding in the last scenes. I can think of 2 possible motives.

Because she expected a date with Yvonne (look at her dressed up all pretty) but then Yvonne left and her hopes were crushed.
Or because she has realized that Yvonne is trying to hand her over to be cared for by another love interest; and it breaks her heart.

Which one is it?

Honestly to me after reading the novel as well it feels more like she is purposefully ignoring it because as far as she believes she is in a hetero dating game so there is no chance that Elsa means what she acts like. Sure just needs to be so unambiguous that Evie has to admit the story has completely changed. It also doesn't help that she has a system that pushes her to on some occasions actively harm her.

Both. It's a low point. Elsa was ditched into a blind date by the person she loves, which must hurt. Elsa isn't oblivious to how Yvonne rejected her with a sense of finality by forcing her to go on a date with Garth, and Yvonne intends for the pair to date long-term. It shows that Yvonne doesn't plan to acknowledge Elsa's feelings, so Elsa may fall into her usual trap of feeling worthless.

Luckily Garth isn't blind to how the two are acting, and is a caring bro. Garth seems as caring as Yvonne but not limited to just one person, and he seems a bit uncoordinated, so I look forward to yuri strategy sessions and Yvonne getting jealous.

The book and play Yvonne loves were probably just thrown into the story for fun, but if Yvonne has a history of favoring books about quasi-romantic relationships between women then Garth would be a likely person to notice. Yvonne grew up with burdens of strict duties and compulsory heterosexuality, so in the off chance the story reveals how she suppressed herself, we'll probably learn about it from Garth before Ms Denial.

Yeah, I keep getting the feeling that Yvonne is just straight up denying her own feelings to keep from getting hurt. She probably thinks if she goes that route, she’ll one day get burned when an actual game intentioned Love Interest pops up and Elsa falls for him. Meanwhile, she also keeps getting into situations where she has to actively do something bad to the girl that she is falling for. Not a pleasant thought that that may continue and escalate.

Can I take a moment to just appreciate y’all commenters on this site? I must say, my literary analysis skills are sorely lacking and I like y’all’s comments for the perspectives it brings. While some comments are.. err... perhaps a bit more divisive than others, I get a lot of enjoyment reading all this, on par with reading the story itself!

I don’t know of many other manga websites that have this active of a comment section relative to visitors on the site

Can I take a moment to just appreciate y’all commenters on this site? I must say, my literary analysis skills are sorely lacking and I like y’all’s comments for the perspectives it brings. I would imagine Mangadex will go back to being active once they get chapter and work comments re-enabled. Though those were always a toss up on it being a dumpster fire or wholesome as fuck. I remember Nante Irinai being pretty cohesive, but Useless Princesses changing as quickly as the wind. Oh, and scanlator wars are thankfully not really a thing here. God, that was miserable.
