My theory is that because yuri (as a narrative genre -- not talking about yuri porn here) has historically struggled with the topic of sexuality (probably because, as we all know, sexuality is an exclusively male phenomenon in Japan /s), stories that put sex work front and center clear that gap by default, letting the authors just tell their stories without going through the "required" motions of "but we are both girls!" and "how do two women even do it?" It's amazing how much creativity is freed up when you just adopt the basic framework that some women do have sex with other women and build on top of it.
