Pancake mix can be fine, but actual pancakes are pretty easy to make and still, I think, a little better.
My ancestral recipe for Pancakes:
1 1/4 cups all purpose flour
1 tblsp. Sugar
1/2 tsp. salt
1 tblsp baking powder
Sift dry ingreds together (although really these days that's not a huge deal--flour doesn't really have lumps like in the old days)
Combine:
2 beaten eggs
1 cup milk
2 tblsp oil (anything neutral is fine--peanut, canola, sunflower, like that)
Stir in wet ingred with dry until dampened only; ignore lumps.
Cook on hot griddle.
