I was thinking about omegaverse based stories the othe day, and it dawned on me, the omegaverse seems to exist mainly to make straight sex feel gay, or gay sex feel straight, depending how the reader wants to look at it.
I see where you're coming from, but I think it's more just a play on the more traditional power dynamics in a dom/sub but without the association with the sado/maso that the former brings to mind.
Maybe the omegaverse genre is a bit more versatile than I gave it credit for and that's just third way a reader could look at it.
EDIT: I'm sure the author has a lot to do with way the reader experiences the characters.
There's a bunch of aspects of the Omegaverse genre that go outside of simple power dynamics.
Things like mating cycles, scents, "animal instincts", nesting, marking, The Gender of it, etc can all contribute to why people like it and why authors might want to write it.
Even the dreaded male alpha x female omega can, in theory, go beyond just patriarchal power dynamics x100 (it never does, but it can).
