I think it's because it's not actually a series as such. It was released as a collection of stories set featuring characters from the same club, rather than a proper series. They're all gathered together under the http://dynasty-scans.com/anthologies/iromeki_girls page.

Could be that Aki's been having those dreams because she's realized on some level that Saki is in love with her, and is responding to that (literally) unconsciously. And of course Saki heard.

That's certainly a bit more realistic than not remembering Saki undressing and dressing her, before and after sex.
