There's a lot of Japanese words here, i'll put the explanations here:
Menma: Made from fermented bamboo shoot, usually eaten with ramen
Katsuobushi: fermented skipjack tuna
Konbu: An edible kelp
Dashi(?): Some kind of soup with one of it's notable ingredient being Konbu
Of course i wouldn't say this is accurate, this is just to help you understand the context
