But gay couples still need to be recognized legally, because there are just so many important things that legal marriage is able to do but simple “adoption” couldn’t. (Not to mention sometimes this so-called “adoption” sometimes doesn’t get recognized as the same as married couples, which can result in plenty of inconveniences.)

^ I mean, in places where there's unlikely to be advancement in LGBT+ rights and equality, people affected usually assume a more pragmatic approach and settle for a way that "have some of the desired effect".

Thus it's not really "I want to adopt you", but "we're not allowed to legally marry, but by becoming adopted parent/child we may legally inherit each other's property after either of us passed away".
