^Yeah the Arknights anime is "okay", not as good as it could be but it could be way worse as well with how bad some gacha adaptions are. With Uma Musume it's focus is on the real life sports legacy of the horses, including real life race results, injuries, and other aspects. Where you have the 3 season series on Crunchyroll, season 1 is the just okay season by PA works focusing on Special Week that I think is bit looser with the historical element, and then season 2 and 3 are by Studio Kai, where season 2 focusing on Tokai Teio is great and is the best of those 3 seasons in my opinion, and season 3 focusing Kitasan Black is better then season 1 but not as good as season 2 imo.
Outside of that the main anime going forward are all by Cygame's own anime studio I believe. Where you have "Road to the Top", which is a 4 episode Youtube series focusing on a trio and I love it. https://www.youtube.com/playlist?list=PLzFNGS7Rcf-PZC8MfcTJX7srArpLdvyfb - it's watchable with subtitles turned on, and the series it's self is the 4 episodes that are 20+ minutes in length.
There's also the movie that came out last year, Beginning of a New Era. I haven't seen it yet but I really want to, I've heard it's incredible. It's coming to AX (anime expo LA) in July, and I hope it will be in theaters in the USA afterwards as I've been holding off on seeing the movie for that reason.
Currently there's the newest anime based off the popular manga Cinderella Gray, which is focusing on Oguri Cap here. This is a series I've been watching on Amazon, and I think it's fantastic so far. It's returning for the next 12 episodes in October I heard.
I think you can watch these pretty much however you want? As they're focusing on different main characters, you could give the 4 episode Youtube series a watch since it's an easily binged introduction, or season 2 on Crunchyroll focusing on Tokai Teio as that season made a lot of people (including myself) fall in love with the anime.
