They do tend to stick to the script much more than random doujins, is one big difference. Most of this is not inconsistent with the manga and the diaries (which are my main concepts of the canon). But like non-curated doujins, they are free to take liberties. So you will see more subtext, for instance, but you won't see, e.g., straight up romance even between Eli and Nozomi or Nico and Maki in one of these. The sense is that you let things (1) be entertaining and (2) fill in some gaps by showing things that would have slowed the plot in the manga or anime. I think the closest thing in canon to these comic anthologies is the diaries.
on edit, I think the Nico / Nozomi thing is pretty much like a regular doujin.
