Well, I never had any interest in those because:
They're not yuri
They're "stories set in the world of Touhou," not "the Touhou story," which is a distinction WITH a difference to me.
As far as I've ever understood it, Touhou is the progenitor of the "cute girl avatars in a battle game" genre that begat all your Genshins Impact and your Arks Knight and all the rest (which I also have no interest in aside from pretty yuri shipping art). It didn't have any kind of story until fans glommed on to their favorite characters and started making doujin of them.
Speaking, again, just for myself, I don't care about the interrelationships of gacha game characters, v-tubers, and the like. They're just assemblages of traits that designers expect fans to be attracted to and want to collect/follow/whatever. If the couple didn't begin in an actual context with history, continuity, and agency, they're just pretty pictures to me.
