I really wish Strawberry Panic and Maria Sama hadnt abruptly ended. I know they continued the stories in the light novels, but still.

Then there is Apocalypse and Flower Flower.

Not yuri at all - Double Arts. It's such a shame that author finished it abruptly and started Nisekoi instead. I guess harem comedies are more popular...or something. Really, it was such an awesome start...sigh.
As for yuri...Flower Flower. The plot was just starting to move...

Huh? I think that one is concluded properly and doesn't need continuations.

Also maybe I'd better remind you guys of Ah! My Goddess (not yuri, though). That's an somewhat negative example where the plots are extended to incredible lengths.
