Also, I really like how the regular and Alter versions of LArtoria both have wives with Mordred as their child.

I wouldn't say that. There are vids of people clearing high level content with even un-Grailed *1, so it all comes down to strategy and RNG, really.

As for the Grailing, among the 4 *3 you mentioned I'd only level 80 Medea and Euryale because of their usefulness. If NA is already in Camelot, then you'll soon realize how powerful Euryale is.

Also, what I forgot to mention was I Grailed other Servants besides Umu because of their services to me + gameplay usefulness. Again, the choice to Grail is in your hands. Whether you want to show your love or gameplay comes first, it's all up to you. What I can add is make sure you use the Grailed Servants a lot, otherwise you'd waste Grails for basically trophy waifu.

Oh yes, I'm fully aware of all of that xD. That is why I'm hesitant, because I know I should just straight grail them to 100, but there are still some gameplay things, my love for servants just can't overlook. If we had much more grails to use, I'd grail them immediately, but because the number is so limited from the beginning I was very careful with my grails. There is plenty 3 stars, I'd totally grail, but I didn't because I can't take it back and I want to make sure I won't regret it. So because of it's limited number, I'm very careful with on who and how many grails I'm spending.

Well, since you're in NA, you're behind like 2 years from JP, which means you still have many untapped Grail resources. I personally only get Medea to level 80, and Ruler Martha to level 90 which means I only used 4 Grails for them. If I were you, I'd Grail *3 to level 80/ 90 depending on how much I like them and their usefulness, and 100 for those I absolutely care about since level 90 to 100 doesn't really offer much improvements. And looking at your avatar, I'd say there's one more Servant you might want to level to 100, one who requires 7 Grails.

Why did you give your account away though? So you no longer play? I only play on NA, btw. I'm so tempted to just grail them to lvl 100, but I'm still hesitant, because after lvl 90 grail only increase by 2 lvls, which feels like complete waste (and number of grails is limited). At this point you are basically grailing them to show off, because, especially for 5 and some 4 stars, their stats are good enough, those bonus lvls don't change much. Yea, I'm definitely for parings between servants. And even Gudako x Female Servant, is still yuri as well xP

Imo some Servant pairings are better than Gudako x F Servant, like Altera x Helena (bless Riyo), Jalter x Fake Bryn, Artoria x Mordred, Anne x Mary, Abigail x Lavinia, Shuten x Ibaraki.
