I've only seen two gachas where you have the choice to play as a woman: Artery Gear: Fusion (which EoSed 6 months ago) and Girls Frontline 2.
There's no reason why you can't headcanon the Sensei is a woman. If anyone gives you shit over it, fuck 'em.

@ObsessiveFingerLicker: Ah fair yeah I thought we were talking about gacha games specifically. If we're talking about gacha anime adaptions I still want Lumine in Genshin's supposedly still upcoming adaption, but I'm unfortunately not holding my breath. I also wish we'd get a chapter of FGO adapted with Gudako as the protag >.>
@colboh: With games specifically I think most Miyoho games let you choose your protag/gender, along with FGO, Endfield (upcoming), notably Path to Nowhere the female protag is picked over the male protag by overwhelming majority from what I've heard. There are various others as well.

Granblue Fantasy also lets you play as a girl, and I've seen people claim veterans play as Djeeta (the girl) more often than as Gran (the boy).
Also apparently the makers of the first season of the anime wanted to use both Djeeta and Gran but Cygames (the game's studio) wanted Gran only.

Frankly, I can't think of any gacha game besides Reverse:1999 that doesn't either
Give the player an upfront choice between male or political gender
Makes the player character ambiguous
There have to be some, but I assume they're in the even less reputable parts of the market.
The problem is that anime adaptions almost always use the male one in either case. The only exceptions afaik are GFL with Gentianne and Arknights with the Doctor (who's apparently supposed to be androgynous. Imho the voice is clearly a dude, but ymmv.)

Also, mere minutes after writing my last post I can think of plenty Gachas that have a fix protag gender ... but they're all female. Infinity Nikki, Love and Deepspace, that EoL'd WiXoss gacha we don't talk about, I think one Touken Ranbu was genderlocked... where is all the mandatory manliness?

^I think the protag of NIKKE is fixed to be male...? If I'm not mistaken. Also maybe Azur Lane but my memory is hazy. I know the new and upcoming Azur Lane game lets you choose your protag though. Which I read that it led to some of the fandom trying to make them take out the female protag, because they think their male protag will get less fan service if there's also a female protag. Reading that made me cringe so hard >_>

That is what I was talking about. I don't understand this at all (let's be real, if sensei was the one in this image BA would be way more popular), but it somehow seems to be effective. All of the major adaptations are from games where the main character is male, and when the game allows the player to choose the gender, they still choose the male version. The games with fixed female protagonist never get adapted.
@FluffyCow
There are some Fate anime with Gudako as the main character. I'm not into Fate (too much to watch/read/play/listen just to get started with it), so don't ask me about it.

^Gudako is only in the short episode adaption of the gag comic, and the couple of comedy episodes. Unfortunately she's never been used in an actual chapter adaption or anything thing serious, no movie or actual series. She's the MC used for comedy animations and that's basically it outside of the occasional 15-30 second game trailer, and I really want her to get an actual anime chapter adaption where she's the MC.
I will say that she has been allowed to be the MC for some of the manga adaptions, which honestly makes it weirder that she's not allowed to be the protag for an actual anime...

Gudako also appear in official FGO anime as one of Masters that got hurt at the beginning, so she kinda officially not-canon.
Funnily enough Fate/Extra anime basically made both male and female MC not-canon (even if male MC is used in anime) since male MC is an Deadface (amalgamation of negative emotions that festered for 1000 years after Moon Cell Grail was won by Pieceman) and female MC was "first", but she lost to Savior)

@Moedred: Fate canon and not canon kind of becomes trivial with the various timelines, all the in universe rule breaking, and how an anime adaption can depict something that's exclusive to it. Maybe Gudako isn't canon in that one anime, but for me she's canon to my timeline and play-through of the game, especially as I experience the exclusive CGs made for her. Plus she's canon to the Shimosa manga as another example. So I wouldn't say what one anime adaption depicts is the end all be all as the "true" canon, especially with how the anime are hit or miss in some ways. Plus Extra is weird, and the anime is...very weird lol
Also I'm not you're saying you're this type of person or anything, just that I dislike the canon argument overall because I've also seen some incel guys on social media try to argue that Gudako isn't canon, and how the game is about Gudao and his girls. To which I just cringe, groan.
@ObsessiveFingerLicker: Carnival is a comedy series, so I don't count it as a serious adaption. The couple of FGO comedy episodes Gudako shows up in is a short FGO Carnival lol
