I really wish there was more HonoMaki. It's my favorite pairing in the series, just due to character interactions and contrasting personalities.
And you hit the critical point I think, of why this pairing works better than something like NicoMaki. They're different, but in a lot of ways complimentary. For NicoMaki, they're pretty much archetypical tsunderes, with the shyness covered up by bravado, the dishonesty, etc. So to get a good story, one has to break out of type in order to provide that contrast. Which I must say, some authors pull off well. But when you match Maki up with pretty much any of the rest, you've got those contrasts in place already and don't need that step of changing one or both, or putting in a third party like Nico's sisters to break the tension.
