So do Vampire teeth regrow/regenerate? If so, do they "know" when to stop growing or do vampires have the rodent issue that their teeth will grow too big if unused?

^ Sharks replace a few of many, a vampire would replace one or both of two. The new ones wouldn't necessarily be ready to be used, when an older fang breaks or falls off. Losing one or both could hamper feeding and thus be an evolutionary disadvantage. So I don't think they'd have the shark method.
Moreover, this once again begs the question: are the fangs used to puncture a wound, from which the vampire sucks or licks the blood or are they hollow straws like with mosquittoes.

^^ Vampires' regeneration is based on the base form of the individual. The normal size of their fangs is set, and the magic simply recreates it as it were before being damaged.

^ Also, they are there for puncturing the skin in most cases, only more a few types of vampires have straw like fangs, like Marceline the vampire queen.

Apparently there's a follow-up where Sandrone somehow also got fangs too.
