So how actually yuri is this yuri job anime? I was thinking about watching this one.

dunno about the anime but the manga is extremely Yuri. It's just that it takes a while to get there, so maybe the anime won't be able to showcase much Yuriness.

^^^ The premise of their cafe is basically roleplaying yuri fantasies to entertain the guests, but then real yuri started growing behind the counter. The casts' personalities have problems and lots of drama arose from there, though. Takes quite some effort to acclimate to the vibe, but once you do it's easier to read, kind of like WataMote.

"Yuri is my work" is probably the best yuri serialization running, if you look at it from multiple angles and throw whatever preferences you personally have on the topic away. It's just... comprehensive is the word that comes to mind. It does take a bit of time to get rolling, but once it sticks you can't really stop reading.
It does not play coy with how crushes, sexual attraction and sex is, for example like by scoring third base doesn't automatically mean you have a permanently locked in relationship. It does not go overboard with it either, things work mostly like such affairs are between young adults in real world.
There are players, girls who are too stubborn or possessive, those who don't want to get involved but are forced to, talking sometimes makes things worse and is not universal antidote to problems, various traumas based on bad previous experiences, workplace not meshing well with your romance or fights, women are not really saints nor devils but something more complicated, etc.

^^^If you like some drama, I only can saiy "just give it a try". The reason why some peoples i know from a certain site (gogo) drops the anime adaptation was because they thought that gonna be a goody fluffy kind of anime, and when they found out that this anime have some of the classic shoujo drama (misunderstanding, lying, triangles and stuff) they leave in a heartbeat. Based on my observation though, at the very least the studio who made this adaptation do a decent job to maintain the concistency of the animations (especially in the early episodes) than said Citrus.

In all honesty, the anime is doing an incredible job at adapting the manga. So far, every change that they've done aren't big and have only helped make the story flow smoother

^Well, something like that. But pesonally speaking, the tropes are several steps above. I copied one of the comment in the gogo : A lot of people just dismiss this as that niche yuri show but the author has really done a great job of deconstructing conventional tropes and making a frustrating but hard to put down story.
and also consider on what the AkinomaHNU said above, about how the adaptation is doing good job so far.
But then again, it's up to you to watch it or not.
