^no, just birds, fish, those rodents that hide in the ground, foxes and boars. Nothing bigger, no cows, no horses, no deers. At least for now.

^^ Also, I think they’ve implied there to be horses considering Kaeya is a cavalry captain and there are outdoor stables around Mondstadt, so horses or something similar exists but they probably don’t have the mechanics ready

"Not present ingame" doesn't equal "does not exist in the setting" seeing as how the former is a function of system and developement resources. It's not hard to discern from the lore that the geographical (and by extensions demographical) scales in-universe are actually considerably greater than the by necessity rather abbreviated gameworld, too.
That's the price to pay for a "seamless" openworld not split into clearly separated zones; in the latter the rest of the population and geography and whatnot is much simpler to handwave into the gaps. ¯\_(ツ)_/¯
