While the X-men have always been a stand-in for any kind of minority, Kitty Pryde in particular has had a long history of being an implied lesbian as far back as the 90s at least. Until of course a writer decided she would be blatantly heterosexual for their run and then that stuck. Sexuality is as malleable as the next writer's mood on any given day in comics.

As someone who bought (when it was new) the first ever issue of X-Men which introduced Kitty Pryde (Uncanny X-Men #129, Jan 1979) from the "Hey Kids! COMICS!" spinner rack at 7-11, she has a long history of being involved with dudes named "Peter".
She was canonically 13-years-old in her debut, and was seriously crushing on Peter Rasputin (aka Colossus) for years. She even asked him to take her virginity at one point when it looked like they were both going to die from the Brood parasites they had been infected with. (Uncanny X-Men #165) He turned her down because she was too young, and because he wanted that first time to be because they loved each other and not because they were about to die.
After she broke things off with Peter Rasputin (for reasons way too complicated to go into here), she dated Pete Wisdom for a while in the pages of Excalibur, which was basically a UK-based version of the X-Men.
They may have made her interested in girls at some point, but that would have been a later character development. At the very beginning, and for years afterwards, she was definitely into dudes.

^As I said, sexuality is all too malleable in the hands of comic writers. I cannot speak for runs before the 90s, but it doesn't surprise me that they flip-flopped so much. At least it was not such a drastic move as when they altered Iceman's mind to make him gay.
