While the X-men have always been a stand-in for any kind of minority, Kitty Pryde in particular has had a long history of being an implied lesbian as far back as the 90s at least. Until of course a writer decided she would be blatantly heterosexual for their run and then that stuck. Sexuality is as malleable as the next writer's mood on any given day in comics.

As someone who bought (when it was new) the first ever issue of X-Men which introduced Kitty Pryde (Uncanny X-Men #129, Jan 1979) from the "Hey Kids! COMICS!" spinner rack at 7-11, she has a long history of being involved with dudes named "Peter".
She was canonically 13-years-old in her debut, and was seriously crushing on Peter Rasputin (aka Colossus) for years. She even asked him to take her virginity at one point when it looked like they were both going to die from the Brood parasites they had been infected with. (Uncanny X-Men #165) He turned her down because she was too young, and because he wanted that first time to be because they loved each other and not because they were about to die.
After she broke things off with Peter Rasputin (for reasons way too complicated to go into here), she dated Pete Wisdom for a while in the pages of Excalibur, which was basically a UK-based version of the X-Men.
They may have made her interested in girls at some point, but that would have been a later character development. At the very beginning, and for years afterwards, she was definitely into dudes.

^As I said, sexuality is all too malleable in the hands of comic writers. I cannot speak for runs before the 90s, but it doesn't surprise me that they flip-flopped so much. At least it was not such a drastic move as when they altered Iceman's mind to make him gay.

So Kitty was created by Chris Claremont, who wrote the main X-Men title and some sister books from 1985 to 1991. During his run, he depicts Kitty as bisexual, not lesbian, as openly as he can at a company that had an official no gays policy at the time thanks to editor-in-chief Jim Shooter. The same applies to most X-women he wrote and some of the X-guys. For instance, it's heavily implied that Storm adopts her iconic punk look after a night of passion with another woman.
Kitty's main love interest is Peter "Colossus" Rasputin, but she also has a certain vibe with Peter's sister Illyana, AKA Magik. They're roommates and besties and would die for each other. Towards the end of the run, Illyana reverts back to childhood and Kitty joins a British team called Excalibur. There she forms a similarly close relationship with her teammate Rachel "Phoenix" Summers. Things had gotten more liberal at Marvel and Claremont wanted to make them an official couple, but sadly we live in a fallen world. Some of the early issues of Excalibur start gearing the audience up for this with panels where Kitty's getting flustered looking at attractive women. The Peter Wisdom stuff is from Warren Ellis's run in the 90s.
