Honestly I don't really like any yuri with Boa Hancock since that girl had an entire island of hot women who wanted to bang her and she still chose Luffy in the end. She's probably the most heterosexual person in the world. But really, shipping her with anybody other than Luffy just feels really out of character to me.

There's no yuri in One Piece but thats probably for the same reason there's barely any het, Oda doesn't want to write romance. It's a reoccurring detail that if a chick is super-hot in the One Piece world other women are going to be attracted to her but that doesn't really go much beyond gags.

This may be just me being really nitpicky but I don't like the Nami/Vivi pairing because Nami was seemingly confused by the fact she was attracted to Kalifla, you don't react with "I'm not a guy so why is this girl hot" if you already were in a lesbian relationship beforehand. I guess you can just pretend that scene never happened, but if you're yurishipping then why ignore the strongest evidence for Nami being into girls?
I'm personally a Nami/Robin man. Yeah I know it will never happen but so will 99.9% of One Piece Ships.

Actually, there's quite a bit of het in OP, they're not central things, but it is not the right genre.
The only "yuri" element in OP (apart from the Hankock's "harem", and some potential subtext with Nami) is the fact that Catharina Devon is shown in the company of female admirers.
Also, there are male gay characters in OP, so a female one isn't improbable.

She specifically says she's not an old guy (or a pervy old guy, don't remember which), meaning she's talking about the fantasy of having a sexy secretary here, not women in general. Also I don't believe Nami and Vivi had a relationship, but Nami sure looked at Vivi like she loved her.
