I think there's still plenty of new Touhou content being created, just look at pixiv / danbooru, and a lot of music/doujin circles are also still active but I guess just not much has been posted here recently.

I have recently became a Touhou fan and I have one question, who hasn't been shipped with Marisa before?

^ Almost nobody. Marisa's pretty easy to write into a romantic scenario, and the memes about her harem are a perpetual motion machine. Of course, she isn't often shipped with characters she has no special relation to, like Yuyuko or Rumia, but even the slightest link can make a character fair game- case in point, we recently got a Marisa X Byakuren X Hecatia fanart. Interestingly, she's rarely shipped with Yukari, even though Yukari is canonically confirmed to show up at her house to play pranks, just like she does with Reimu.
