Well first of all, your definition of canon is rather loose it seems. Unless it's been confirmed by Nasu offhand somehwere, the Visual Novel does not actually point it out. It's mostly portrayed as a hunter-prey kind of deal with obvious fanservice/joke connotations.
Secondly, Ayako very clearly opposes the idea intensely and is afraid of Rider. Crack ships are usually ships that cannot, should not or make no sense to happen.

If you think despite Rider's clear attraction to Mitsuzuru it makes no sense to ship them, in the same sense that, say, shipping Rider and Waver, who never met, then sure, that's a crack ship. Rider x Mitsuzuru never was an official couple (which would negate the point of shipping in the first place, and in fact I don't think there're few among Fate MCs), but between "official couple" and "crack ship" there's a big abyss.

I am saying Rider's "clear attraction" isn't portrayed as romanitc or sexual. At least not clearly enough to make it as set in stone as you claim. And when a character hates/is afraid of the other and no romantic interest is clearly displayed on either side, even in subtext, I consider a ship a crack ship usually. It's like shipping Illya with Berserker. Sure, those two care about each other and have a deep connection, but it was never shown to be romantic.

I said Rider's attraction was canon, not a romantic relationship between her with Mitsuzuri. I talked about being an official couple, like Iri and Kiritsugu. There's ample room between that and a crack ship, including pairings like the main heroines of FSN x Shirou, which only aren't the former because there's no official route, really. That said, if you don't see anything remotely sexual in Rider's behaviour around her, then sure, call it a crack ship.

That sexual stuff can just as easily be interpreted as normal predatory behaviour. The reason this ship exists at all is because people twist it into the sexual predator perspective. I find their interactions funny, so I like the ship, but I still know it's a crack ship.
